Four Simple Summer Dinners

I usually post our dinners on the blog but occasionally I get lazy or figure something is just TOO simple to share. But then I remember sometimes it's not about creating something totally out of the box but rather just being reminded of the simple things to make during the week to keep you nourished and satisfied.

When I'm brainstorming what to cook for the week I'm of course partly trying to get creative to give you all new ideas and to keep myself inspired in the kitchen, but at the end of the day, my lifestyle is about sustainable living. That means choosing to create meals that are approachable, doable, and sustainable. Not just sustainable in terms of ingredients and waste (that too!) but in terms of not getting yourself too wound up about the creativity of the meal and instead allowing it to be an enjoyable experience that puts you on a path to more home cooking.

All of that is to say, I've got a few meals I'm sharing today that are super simple but might be some good inspo for what to make in the coming summer months!
