Quick Crockpot Meal: Salsa Verde Chicken Salad
The Easiest Dinner In My Repetoir:
I’ve told you one of my favorite go-to two ingredient slow cooker dishes is salsa verde chicken. It can be done with chicken thighs, breasts, or even drumsticks. For this variation, I did breasts because that’s my husband’s favorite and we were eating chicken thighs another night that week.
I can’t even call this a recipe because it is literally chicken and a jar of Trader Joe’s Salsa Verde (Whole 30 Approved BTW) in the slow cooker for a few hours until the chicken is fully cooked. Then you shred it with forks or tongs. Legit that easy.
For me this is a great meal for Monday night’s when I teach later and don’t get home until around 7:30 but am STARVING when I walk in the door so I always want something that only takes about 10 minutes to put together.
For this particular night, I used the chicken to make a delish salad bowl using Trader Joe’s 3 mintier frozen brown rice and fresh baby spinach. I topped it with stuff that was mostly made up of pre-made from Whole Foods like pico de gallo & guac but you know what sometimes you gotta take shortcuts in life to enjoy dinner at home.
