Green Panzanella Salad

You guys all know how much I love YogaClub Box, and today I wanted to share with you some exciting details about a blog post I recently wrote for them!

They asked me to come up with something that was perfect for Earth Day, but also delicious. My inspiration was the fact that so much of sustainable eating/living is about reducing your food waste. I do this in two ways: 1) through Imperfect Produce and 2) by making dishes that consciously use up things in my fridge/pantry or figuring out how to best freeze & re-use.

So without further ado, HERE is where you can find my Earth Day inspired, green panzanella salad. It was delivious and easy, it was fresh but filling. And now I'm wishing I had a big bowl of it on hand!
