Leftover Hodgepodge Lunch

One drastic change from my old corporate schedule is that I'm now usually home for lunch and often not for dinner. I've always loved eating healthful lunches, so even at PepsiCo I was meticulous about packing well rounded meals in adorable tupperware, but the big shift here is that I now get to eat lunch on a real plate! I have a few go to's for my usual salad/hodgepodge lunch, avocado for example or roasted butternut squash because generally I have those things on hand. Yesterday however I had a few bits of leftovers that I wanted to use up - roasted asparagus & Cappello's gluten free/dairy free/soy free gnocchi. For protein I opted for Trader Joe's Frozen turkey meatballs, which have been in my freezer for ages just waiting to make their debut. I knew they would come in handy one day and yesterday was that day. I popped them in the microwave for 4 minutes and squeezed a heavy hand of lemon juice on top, and voila.

I was so pleased with the turkey meatballs that I even repeated them with my roasted butternut squash and of course more lemon, because lemon literally makes everything better. Try it.
